04 - Taste and adjust seasoning or jalapeño level as desired.

07 - Remove from oven and let cool for 5 minutes before serving with tortilla chips.

# Helpful Hints:

01 -
  • It disappears faster than you can refill the chip bowl, which means youre doing something very right.
  • You can make it the night before and let the flavors settle, or bake it hot and bubbly right before guests arrive.
  • The sweetness from the corn calms down the heat just enough to keep everyone coming back without setting their mouths on fire.
02 -
  • If your cream cheese is cold, the dip will stay lumpy no matter how long you stir, so let it sit on the counter for at least 30 minutes first.
  • Draining the whole kernel corn completely is essential, extra liquid will make the dip runny and sad.
  • Tasting before baking is the only way to know if you need more jalapeños or salt, once its in the oven, youre committed.
03 -
  • Use a hand mixer for the cream cheese and sour cream, it makes the base impossibly smooth and takes half the effort.
  • If you want to dial down the heat without losing flavor, remove the seeds from the jalapeños before chopping.
  • A sprinkle of extra cheddar on top before baking creates a crispy, cheesy crust that people will fight over.
