Chewy bars with oats, nuts, dried fruit, and honey; a convenient and nutritious snack for any occasion.

# What You'll Need:

→ Dry Ingredients

01 - 2 cups old-fashioned rolled oats
02 - 1 cup crisp rice cereal
03 - 1/2 cup chopped mixed nuts (almonds, walnuts, or pecans)
04 - 1/2 cup dried fruit (cranberries, raisins, or chopped apricots)
05 - 1/4 cup unsweetened shredded coconut, optional
06 - 1/4 teaspoon salt

→ Wet Ingredients

07 - 1/2 cup honey or maple syrup
08 - 1/3 cup creamy peanut butter or almond butter
09 - 1 teaspoon vanilla extract

→ Optional Add-Ins

10 - 1/4 cup mini chocolate chips
11 - 1 tablespoon chia seeds or flaxseed meal

# Directions:

01 - Line an 8-inch square baking pan with parchment paper, allowing overhang on sides for easy removal of finished bars.
02 - In a large mixing bowl, combine oats, rice cereal, chopped nuts, dried fruit, coconut if using, and salt. Mix thoroughly.
03 - In a small saucepan over low heat, combine honey and peanut butter. Stir continuously for 2 to 3 minutes until melted and smooth. Remove from heat and stir in vanilla extract.
04 - Pour the warm honey mixture over the dry ingredients. Mix thoroughly until all components are evenly coated.
05 - If using chocolate chips, allow the mixture to cool for 2 to 3 minutes before folding them in to prevent melting.
06 - Transfer the mixture to the prepared pan and press firmly and evenly using a spatula or the back of a measuring cup.
07 - Sprinkle additional chocolate chips or nuts on the surface if desired, pressing them gently into the mixture.
08 - Refrigerate for at least 1 hour, or until the mixture is completely set and firm.
09 - Use the parchment overhang to lift the entire block from the pan. Cut into 12 equal bars using a sharp knife. Store in an airtight container in the refrigerator for up to 1 week.

# Helpful Hints:

01 -
  • They're ready to eat in under twenty minutes of hands-on time, with no baking stress.
  • You can customize them endlessly—swap nuts, change the dried fruit, add chocolate chips or leave them out.
  • They actually taste indulgent while being genuinely nutritious, which feels like winning the snack lottery.
02 -
  • Don't skip the chilling step—I learned this the hard way when I tried to cut warm bars and ended up with a crumbly mess that taught me patience is an ingredient too.
  • The parchment paper overhang is genuinely life-changing; it transforms a wrestling match with a spatula into a clean, simple lift.
  • If your honey has crystallized, warm it gently in a bowl of hot water before mixing, and everything will flow smoothly.
03 -
  • Use a hot, wet knife when cutting—dip it in hot water, dry it quickly, cut one bar, then repeat for clean edges without sticking.
  • If your mixture seems too thick to press into the pan, let it cool for another minute or two rather than pushing so hard that you create a dense brick.
